Chipotle Mayo Sauce (my version)

Smoky, creamy, and just the right amount of spicy. Perfect as a dip, spread, or drizzle on tacos and burgers.

Ingredients

  • 1 cupmayonnaise
  • 2 wholechipotle peppers in adobo (canned)
  • 2 clovegarlic (finely minced)
  • 1½ teaspoonfresh lemon juice
  • salt and pepper (to taste)
  • ⅓ cupsour cream (stirred in at end)

Instructions

    Put mayo, chipotle peppers, garlic, lemon juice, salt, and pepper in an electric chopper or small food processor. Mix until peppers are fully chopped with no large pieces remaining.

    Transfer to a bowl and stir in sour cream. Refrigerate until ready to serve.

    Optional: stir in ¼ cup BBQ sauce for a sweeter variation — excellent with smoked brisket.
