Ingredients
- 1 lbchopped steak (leftover steak works great)
- ½ cupwhite onion (chopped)
- 1 Tbsolive oil
- ¼–½ tspMexican oregano
- salt (to taste)
- pepper (to taste)
- garlic powder (to taste)
- fresh lime juice (juice from ½ lime)
- 6–8eggs
- corn tortillas
- cheese (your choice)
- avocado (sliced, mashed, or cubed)
- cilantro (for garnish)
- hot sauce or salsa
Instructions

Heat olive oil over medium heat in a cast iron pan or griddle. Sauté onions until translucent.

Add steak and seasoning. Cook until done. Remove and cover to keep warm.

Melt a tablespoon of butter in the pan. Add eggs and scramble. Remove from heat.

Cook tortillas in a separate pan with a little cooking spray. Melt cheese on top of each tortilla.

Fill tortillas with steak, eggs, and avocado. Top with hot sauce and garnish with cilantro.
