Tasty Bean Dip

Baked spiced refried beans with cream cheese and melted cheese on top — a guaranteed crowd-pleaser with tortilla chips.

Ingredients

  • 2 cupsrefried beans (freshly made or canned)
  • 1–2fresh jalapeños (finely chopped)
  • 1–2 clovesgarlic (minced)
  • 1 Tbsolive or avocado oil
  • ½ tsppaprika
  • ¼ tspcayenne pepper
  • ¼ tspcumin
  • 1 tsponion powder
  • 8 ozcream cheese (1 block, softened)
  • 6–8 ozsour cream
  • 1 cupgrated cheese (Monterey jack, colby jack, or pepper jack)
  • salt (to taste)
  • green onion (chopped, for topping)
  • diced tomatoes (for topping)

Instructions

    Preheat oven to 350°F.

    Heat oil in a small pan over medium heat. Cook jalapeños 1–2 minutes. Add garlic and cook until fragrant. Remove from heat.

    Heat refried beans in a saucepan until hot. Stir in spices, salt, and jalapeño/garlic mixture. Add cream cheese in small squares and stir until melted. Stir in sour cream.

    Transfer to an 8×8 or 9×9 oven-safe pan. Bake 15–20 minutes. Top with grated cheese and bake until melted.

    Cool 15 minutes. Top with green onions and tomatoes. Serve with tortilla chips.
